Beer Batter Halibut
This is more a method of preparation than an actual recipe.
Use fillets of halibut , at least one inch thick, cut into squares about 2
inches . Prepare a batter of Bisquick and warm flat beer, adding enough beer to
make a fairly thick batter, then chill. Dry the halibut with paper towels.
Prepare a deep fryer with oil half way to the top. Preheat the oil to 400
degrees. Dip halibut in chilled batter and carefully place in hot oil. The
halibut should turn a golden brown almost immediately and float to the surface.
Total cooking time is about 3 minutes. Test the first piece, if flaky it's done,
don't over cook.
note; add seasoning and salt to batter when mixing. To
